Way Too Easy Enchiladas

 

This is a recipe straight from Campbell's Meal Mail.  I haven't made any changes to it other than formatting to make it easier to read, so they get the credit.

  •  1/2 c shredded cooked chicken or pork or beef
  •  1 10" flour tortilla
  •  1/2 cup Enchilada Sauce
  •  1/2 cup shredded Cheddar Jack cheese

  1. Place chicken down center of tortilla.  Top with half the enchilada sauce and half the cheese.
  2. Roll up and place seam side down on a microwave safe plate.
  3. Top with remaining sauce and cheese.
  4. Microwave on High 1½ to 2 minutes or until cheese is melted.

For Cheesy Enchilada: Omit meat and use 1 cup cheese.  Place ¾ cup cheese on tortilla.  Top with half the enchilada sauce.  Roll up and prepare as above.
