I'm not an especially creative cook. This probably stems from the fact
that my mother cooked from boxes. She did have a few real recipes but
for the most part it was Hamburger Helper or Drive Thru.When Vince came
along he did some cooking which in turn inspired me to finally try my hand
in the kitchen. A limited budget prevents me from getting really
creative with my cooking but I have learned a thing or two about making our
food dollar stretch.

Chicken In Advance™ - Nearly any recipe can use my Chicken In
Advance™. Once you start using it I'm sure you will wonder how
you ever cooked without it.
- Watch for whole chicken on sale. Experience has taught me
not to buy a chicken under 5 lbs. You will find that the same
grocery store will have whole chickens on sale for around the same
price on a fairly regular schedule. If you can get to a
Costco, all the better.
- Buy at least 3 to make the time required worthwhile. I
find that if I set aside an afternoon for cooking them and make
something using Chicken In Advance™ that night, the whole experience
is much smoother.
- You can cook 2 chicken at the same time in your standard turkey
roaster. With experience you will be able to tell just by
smell and sight when your chicken is done cooking.
- I don't season my Chicken In Advance™. I simply add a
touch of water to the pan and cook a 5 lb chicken about 2 hours.

- After the chicken is cooked allow it to cool until you can
easily handle it. Remove the skin and tear (or cut if you are
squeamish) it into bite sized chunks.
- Place 2 cups of chicken into freezer bags. Remove air and
manipulate the chicken until it's a flat package. Then stack
in the freezer.
- Viola!! Chicken In Advance™!! Now you are
ready to cook any chicken meal in mere minutes.
