Quite easily one of Vince's favorites. Disgustingly easy to make.
Even easier to stretch for unexpected company.
- 1 lb ground meat or 2 cups Chicken in Advance™
- 1 package taco seasoning (or be smart and buy it in bulk from
Costco!)
- 2 cups water
- 2 cups instant rice
- 1 cup shredded cheese
- Optional toppings - sour cream, guacamole, crushed tortilla
chips
- Brown meat...if using Chicken in Advance™, defrost.
- Add taco seasoning, water, rice and cheese.
- Mix well and cover.
- Simmer over medium low heat 5 minutes.
- Serve with desired toppings.

You might want to adjust the amount of cheese and/or taco seasoning used
depending on your preferences. Need to make this stretch for
unexpected company? Simply increase the rice and water by 1 cup
increments. I've used 1 lb of meat with as much as 4 cups of rice
with no complaints. You should increase the amount of cheese
accordingly. |
